How was your week?  We are getting used to our new normal and working out what’s what amidst a building site!  I’m delighted that the wardrobes are now finished (sans doors) so we can hang up our clothes yay! but now on to dinner instead!  We are up to 25 weeks of Your Weekly Feed and Kim & I are so delighted with all the fabulous meals that are being linked up. We really hope that you are getting some meal inspiration out of it and trying out some new things.  We’d love any feedback on what you’d like to see more of, less of or any changes we can make as it’s meant to be a resource for everyone who makes dinner!

While this next one isn’t dinner it’s a fabulously healthy snack and perfect for lunch boxes Vegan Banana Muffins from Pretty Wee Things.

In keeping with the healthy theme going on here my contribution is a Nearly Peri Peri Baked Fish with Lemon Coriander Brown Rice.  It’s “nearly” because I didn’t use chilli so the girls would eat it but by all means add some hot chilli and make it Peri Peri. It’s not the most glamorous looking meal but it is really tasty, healthy not to mention pretty easy to make too.  I got the inspiration for this from a random cookbook the supermarket was handing out for free a few years ago and I found it again when packing up for the move, inspiration can strike anywhere!!

Nearly Peri Peri Baked Fish with Lemon Coriander Rice

Nearly Peri Peri Baked Fish with Lemon Coriander Brown Rice

Ingredients

    For the Fish
  • 4 white fish fillets
  • 1 garlic clove, crushed
  • 1 Tsp tomato paste
  • 1 lime, zested & juiced
  • 1/2 tsp sweet paprika
  • 1/4 tsp ground tumeric
  • 2 tsp olive oil
  • salt & pepper to taste
  • For the Rice
  • 2 -3 C brown rice
  • 1 lemon zested & juiced
  • 1 Tbsp fresh coriander, finely chopped
  • 1 garlic clove, crushed
  • Salt
  • Greens of your choice

Instructions

  1. Preheat the oven to 200 degrees and grease or line a baking tray with baking paper
  2. Prepare the rice as per packet instructions
  3. Mix into a paste the garlic, tumeric, tomato paste, paprika, lime zest & juice, salt, pepper and olive oil Place the fish fillets into the baking tray and then brush the paste over the fish and bake in the oven for about 15 minutes
  4. Meanwhile prepare your greens and combine the lemon & coriander in with the rice
  5. Once all cooked plate up and enjoy

    So glad you can hang up clothes Hun, it may seem simple but when your amongst it, it’s huge!
    Oh yum, that’s what I love about YWF it doesn’t have to look pretty (even though yours looks great) it just has to taste great!
    The Beef Nacho Bowl is the same its not the prettiest dish in the world but my god it’s tasty! xx
