Your Weekly Feed # 32 the anytime meal


I hope you have had a good week?  Ours has been choc a block full of action, renovations, Christmas concerts, the end of the school year and my Mum coming to stay in our work site home for the week plus some annoying technical difficulties on the blog.  Sunday has rolled around again and Your Weekly Feed is here to pump out some ideas to help you with that “What’s for dinner tonight” question too!

I found it very hard to pick just 2 meals to highlight from last weeks YWF as I wanted to devour everything. I was particularly frustrated by not having a working oven for a few days too while it was being moved from the old kitchen to the new so I couldn’t get stuck into trying out some of the deliciousness!  I think special mention needs to got to Lauren of Create Bake Make with her Spinach Cobb Loaf recipe as it’s a classic and I literally wanted to lick the screen when I saw it pop up. Sammie from The Annoyed Thyroid has a lovely story attached to her Pumpkin Curry recipe which really opened my eyes to the plight of the asylum seekers.  However my co-host Kim over on Land of Zonkt had me with her Grilled Apricot Chicken Tenders

I’m developing quite a soft spot too for Fish Tacos so these ones from The Purple Ladle are just begging to be made soon.

Fish Tacos

Given that this week has been crazy I’m sharing a meal that I wrote about last week when I was taste testing some cheeses.  It’s really good though, I think, and worth sharing again as I’m sure I’m not the only one at the moment with life running in the fast lane so a meal that can be eaten at breakfast, lunch, dinner or anytime in between and that is delicious to boot might be something that you are after at the moment?  Does a Thyme Mushroom Toastie grab you?

Thyme Mushroom toastie with Landkaas

Best to use a sandwich maker for your toastie but if you don’t have one (like me), using the grill is also fine.

What you need (to make 1):

2 slices of your favourite bread (I used a spelt sourdough)

1 Tbsp Dijon mustard

a knob of butter

3 – 4 mushroom, finely sliced

1 Tbs thyme, leaves only

2 thin slices of Frico Landkaas or as an alternative parmesan

a handful of baby spinach leaves

salt & pepper to taste

What you do:

Melt the butter in a small fry pan, while this is happening spread the dijon generously over both slices of bread. Put one slice of Landkaas on top of the bottom piece of bread

Put the mushrooms and thyme into the frypan and cook over a medium/high heat for 4 – 5 minutes until the mushrooms are soft. Season with salt & pepper to taste.

Place the cooked mushrooms on top of the cheese on the bottom piece of bread and then top with the baby spinach and other Landkaas slice. Put the other piece of bread on top and then transfer to the toastie maker (or griller) and cook until the bread is toasted and the cheese is melting.

    Yummo, I love a good toastie and the dijon/thyme/mushroom combo in this one sounds AMAZING! I think we have loved our sandwich press to death in this house as it is quite literally falling apart now (which also reminds me I should get a new one…). Sometimes the simplest of meals are the best, aren’t they? 🙂 Thanks so much for hosting, looking forward to checking out everyone’s delicious fare x

    I am a big mushroom fan so am loving the look of your toastie. I am unsure I am ever going to be able to have toastie again for the next 2 years with these braces though. Everything is “deconstructed” at the moment. I’m very trendy! 😉

      Oh no I didn’t realise that you had them on, poor thing no wonder you are into the smoothies at the moment! When your mouth is not so sore I’m sure you will love this toastie and yes you are very trendy!

    I love anything and everything mushroom so this is like my dream sandwich on a plate! So much yum!

    How can you go wrong with a toasted sandwich – a perfect ‘end-of-the-year’ meal…because you can be lazy like that 🙂
