Coconut Maple Bananas for breakfast


I love breakfast but we have been stuck in a rut of late so I’m enjoying not having to rush around in the mornings during the holidays and experimenting with different recipes. Coconut Maple Bananas have proven to be a hit and are being devoured at the moment (especially by me and I don’t normally eat bananas on their own so that is saying something!).  They would also be yummy for dessert.

Easy to make just follow these steps:

What you need:

1 banana per person

2 Tbsp Coconut Oil per banana

1 Tbsp Maple Syrup per banana

What you do:

Heat the coconut oil in a fry pan over a medium high heat

Slice the banana and drop into the pan and cook on one side for about 2 minutes

caramelising bananas in coconut oil

Add the maple syrup (if you add it at the beginning it will get too hot and stick to the pan making it difficult to get the bananas out!), turn the bananas over and continue cooking for another minute or so until they are soft and starting to caramelise then you are done!

Enjoy them on their own or with yoghurt, granola and berries (or ice cream)!  I think they would also be nice with ricotta hotcakes or french toast, hmm might try that next.

    So going to try this this weekend for breakfast! We love pancakes on the weekend, and this would be perfect on top! With even more maple syrup drizzled over the top and sprinkled with shredded coconut…now that’s my kind of breakfast! Genius idea Vicki, love it 🙂

      I’ve been doing a 5 day “cleanse” this week so it’s been very hard not to try out all the food!!! This breakfast would be allowed though so all good!
