Paw Paw Melon Smoothie

Feeling hot, hot, hot?  This Paw Paw Melon Smoothie is so refreshing, packed full of vitamins and antioxidants and great at breakfast, for a snack or an afternoon reviver.  Paw Paw’s and Papaya (one is redder than the other but both are from the same family) are high in Vitamin C and contain an enzyme called papain that is supposed to aid digestion.  Paw Paw is also good for healing skin ailments and burns. To make this particular smoothie …

You need:

1 C roughly sliced paw paw (or papaya)

1 C roughly chopped watermelon

juice of 1 orange (or if using a Thermomix flesh of an orange but remove skin and pith)

1 C rockmelon

juice of 1 lime (or like above if using a Thermomix use all the segments but remove the pith and skin

1 C coconut water & 1 C water (just because coconut water is expensive going half/half makes the bottle last longer!)

1/4 mint leaves

What you do:

Put all the ingredients in a high speed blender or Thermomix and blitz until it’s a smooth liquid (TM speed 9 / 1 minute).

Will make 3 x 600ml jars and will keep in the fridge for 24 hours.

    This looks fantastic, and absolutely perfect for a bit of a New Year cleanse, QLD style! I could really go for a glass right now, as it’s so muggy today here in Brissie. I also love that this makes a lot and can be stored in jars in the fridge for a ready-to-drink smoothie – a great idea for me, because I love smoothies but sometimes avoid making them when I’m busy because I simply don’t want to clean the blender!

    This looks delicious! We make something similar with watermelon and mango! There’s just something so refreshing about watermelon, isn’t there! We watched Fat, Sick and Nearly Dead 2 over the holidays so we’re going to be juicing like a boss!

      Should I watch that movie too? I’m loving watermelon at the moment so sweet and refreshing which is much needed here right now!
