Sweet Potato Spanish Omelette

What is a “Sorta” Spanish Omelette with Sweet Potatoes you ask?  Well it’s a what’s left in the kitchen at the end of the week type of meal that’s actually really yummy served up on it’s own as a meal, lunch or dinner or as a side dish.  It’s like a Spanish Omelette but I used sweet potatoes and threw in some zucchini for good measure!

I took it along to a family gathering the other night and it got the thumbs up from the Under 9’s, the over 70’s and everyone in between so that was enough of a go ahead to share the recipe with you now too.  Could be the perfect “Meatless Monday” meal or any time food, it could probably even go in the lunch boxes.

Sweet Potato & Zucchini Spanish Omelette

“Sorta” Spanish Omelette with Sweet Potatoes


  • 2 Tbsp olive oil + 2 Tbsp olive oil
  • 1 kgs sweet potato, peeled and thinly sliced
  • 1 onion, thinly sliced
  • 2 cloves garlic, crushed
  • 7 eggs
  • 2 Tbsp milk
  • 1 Tbsp chives, finely chopped
  • 1 zucchini, thinly sliced
  • 1/2 C Tasty cheese, grated
  • 1/2 C mozzarella, grated


  1. Preheat the oven to 180 C and grease a round pie dish or oven proof serving dish
  2. Heat 2 Tbsp olive oil in a big fry pan and add onions and sweet potato, then add the rest of the olive oil. Cook for 5 minutes stirring regularly and then add the garlic, cook for a further 5 minutes or until sweet potato is soft. Allow to cool.
  3. Whisk the eggs, milk and chives, salt & pepper together
  4. Place the sweet potato mixture into an oven proof dish and mix the zucchini through
  5. Pour over the egg mixture and spread the vegetables evenly if required
  6. Bake in the oven for 25 minutes and then top it with the grated cheese. Bake for a further 5 minutes or until the cheese has melted and golden.
  7. Slice and serve from the dish.
