Crispy Skinned Salmon with Mango & Avocado Salsa

This Crispy Skinned Salmon looks fancy but it is so quick & easy to make and is packed full of goodness it’s becoming a bit of a regular around here. I don’t even like mango, so that is saying something!  You are getting good fats, Omega-3’s, vitamins and a delicious meal all in under 30 minutes without having to go to very much effort at all.

I usually buy my salmon with the skin on as it’s cheaper that way and so easy to cut off yourself and mangos are currently in abundance, especially up here in the Tropical North. You can get a whole big bucket for $10 or just one for free like the lovely man in the market gave me!  While this is perfect seasonal eating for us here in Australia, tinned mango would work just as well if that is all you can get in the northern hemisphere.

Crispy Skinned Salmon with Mango & Avocado Salsa


  • 4 Salmon fillets, skin on (or if yours are like mine the girls have half a big fillet each)
  • 1 mango, chopped into bite sized cubes
  • 2 avocados, sliced into bite sized cubes
  • 2 spring onions, thinly sliced
  • juice of 1/2 lemon
  • olive oil
  • salt & pepper to taste
  • Salad leaves (I use baby spinach)


  1. Heat about 2 Tbsp olive oil or butter in a fry pan and cook salmon skin side down for 5 - 7 minutes or until just about cooked through turn over for a last minute or so ( or until just cooked through)
  2. In a bowl mix the mango, avocado, lemon juice, salt, pepper and about 1 Tbsp olive oil until all combined.
  3. Plate up salad leaves and then put the salmon ontop skin side up.
  4. Top with the salsa
  5. Enjoy!

The hardest thing about this recipe is cutting the mango.  Healthy & nutritious, looks and tastes delicious!!  This is a great way to get fish into you diet each week but it would also be a lovely meal with chicken breasts as well.

    I love salmon, I buy the whole side of Salmon from Aldi it’s delicious & pin boned. So yum.
    Love the avo & mango combo. Yum. I’m not crazy on mango but this summer have been going nuts with it.

      No Aldi up here!! You know I’m not mad on mango either but given it’s a staple up here I’m beginning to get into it.

    This looks so fresh. If I served the mango up in a salsa, I may be more likely to get some…. We have it as a snack often and I am so busy cutting it up that I don’t get a look-in. ;p You’ve gotta be quick here when it comes to mango.

      Ha! I know what you mean, I prefer avocados but they make a great combination together.
