Honey Mint Lamb Meatballs

These Honey Mint Lamb Meatballs are an easy mid week meal that can double up for lunch boxes the next day too.  In my book that’s a lamb winner dinner! What do you think? Combined with oven baked sweet potato / potato chips and a salad it makes a complete meal that the whole family can enjoy or a great kids meal for any time really.

I saw some pre-made meatballs like this in the supermarket and thought that the flavour would be yummy but I didn’t want all the added preservatives & fillers they put in so I got a bit creative at home and came up with this version. Want to see the recipe?

Honey Mint Lamb Meatballs in the Thermomix

I made these in the Thermomix but if you just chopped everything by hand and combined in a bowl with a wooden spoon then follow the steps in the recipe you can do it that way too.  Mine have some zucchini in them but you could hide all sorts of vegetables if you are that way inclined too.

What you need:

1/2 brown onion

1 garlic clove

1 Tbsp olive oil

1/2 zucchini

4 Tbsp mint leaves

500 g lamb mince

2 Tbsp honey

1 egg

1/2 C (40g) breadcrumbs or a seed mix if gluten is a problem

What you do:

Preheat the oven to 180 degrees and line a baking tray with baking paper

Put the onion and garlic in the Thermomix (or chop finely) Speed 5 / 3 seconds

Add 1 Tbsp olive oil and saute 2 minutes / Speed 1 / 100 degrees (do in fry pan if no Thermo and once sauted remove from heat and put in a bowl)

Add zucchini & mint leaves (finely chopped) Speed 5 / 6 seconds

Add mince, honey, egg and breadcrumbs and combine Reverse / Speed 4 / 10 seconds scrape sides and then repeat for 3 seconds

Scoop out tablespoon sized amounts of mixture and roll into balls. Put on baking tray and drizzle with oil

Bake in the oven for about 20 minutes or until cooked through, turn halfway through
