Leek Cauliflower & Chicken Soup

This is one of my favourite soups, full of flavour, creamy with without any actual cream in it, healthy, nourishing and quick and easy to make. Leek, Cauliflower & Chicken Soup ticks all the boxes for a winter winner.  It’s a tasty tummy warmer and a great lunch or light dinner with a bit of crusty bread slathered in butter to dip into it.  Yum!  Want some now? It’s also gluten free, sugar free, egg free, low carb, low GI but still manages to taste great, what else do you want?

Whether you are using a Thermomix or the traditional way it takes less than half an hour and can be frozen if you want to save some for another time – otherwise this recipe will serve 2 – 3 so just double if you want to make it for the whole family.

You can change out vegetable stock in the recipe with chicken stock or bone broth whatever you have handy. I use this slow cooker chicken bone broth recipe when I do it  and adding it into soups add loads of extra nutrients and gut healing properties too so you are doing your body good without any extra effort (it’s also a good way of getting it into fussy kids or adults for that matter!). Back to the recipe of the day though, Leek, Cauliflower & Chicken Soup!  The traditional recipe is up first followed by the Thermomix version so keep scrolling if you want that – makes it sooooo easy!

Leek Cauliflower & Chicken Soup

Leek, Cauliflower & Chicken Soup


  • 1 leek white part only - thinly sliced
  • 1/2 head cauliflower roughly chopped
  • glug of olive oil to cover bottom of pan
  • 600 g water
  • 200 g chicken breast or chicken tenderloins chopped into about 2 - 3 cm cubes
  • 1 Tbsp vegetable stock concentrate
  • 30 g parmasen - grated
  • salt & pepper to season to taste


  1. Cover the bottom of a stock pot with olive oil and heat
  2. Add leek and saute until soft and translucent
  3. Add water, vegetable stock, cauliflower and chicken and bring to the boil
  4. Simmer for about 15 minutes
  5. With a stick blender whizz until smooth (can be poured into a blender if you don't have a stick but careful not to burn yourself while transferring!)
  6. Add seasoning to taste
  7. Serve with parmasen mixed through it

  • 30g parmasen cheese
  • 1 leek white part only
  • 1/2 head cauliflower roughly chopped
  • 30 g olive oil
  • 600g water
  • 200g sliced chicken breast or tenderloins
  • 1 tbs vegetable stock concentrate
  • Salt & pepper to season to taste


  1. Place parmasen in bowl & great 10 sec/ speed 9. Set aside
  2. Place leek in bowl & chop 3 secs / speed 7. Scrape down sides of bowl
  3. Add olive oil & saute 3 mins / Varoma / speed 1
  4. Add cauliflower, water, vegetable stock and chicken stips and cook 15 mins / 100 C/ speed 1
  5. Blend 30 sec / speed 9
  6. Serve with parmasen mixed through

    Sounds just perfect, Vicki! The temperature here in Brisbane has suddenly just taken a dive and we’re starting to rug up not only at night but during the day too, so it’s well and truly soup weather now! This soup sounds so comforting, and it’s always a bonus when it takes under half an hour too 🙂

    OMG! This is what I am having for lunch tomorrow, well if hubby buys me some cauliflower on his way home from work in the Ops Centre for SES. Otherwise I will have to have potato and leek but this is exactly what I want!
    Thanks for sharing Vicki. I am loving that I can use my thermomix and whip up a soup for lunch just before I want it.
    Now I just need to find myself an easy bread recipe to make some rolls to go with this for lunch!
