Sweet Potato, Chorizo & Haloumi Muffins

We had some new friends around for brunch the other week and it ended up being one of those epic days that move from brunch through to dinner and after spending 10 hours together we are now all great friends!  I took a risk and tried out these Sweet Potato, Chorizo and Haloumi Muffins on them.  The batch that day tasted great but I over processed them so tried them out again during the holidays with some other friends who were visiting to escape the cold of Melbourne.  I think I’ve now nailed the recipe so this post is dedicated to both Lesley & Jo plus all the kids who gave them the thumbs up!

I made these in the Thermomix but have got the regular method for you as well, however you make them they are worth having!  Perfect for brunch, lunch and lunch boxes if you like all these ingredients I’m sure they will become a favourite at yours too!

Sweet potato, chorizo & Haloumi Muffins

First up is the Thermomix recipe followed by the regular method.

Sweet Potato, Chorizo & Haloumi Muffins - Thermomix

Ingredients

  • 300g sweet potato (peeled and roughly chopped)
  • Big handful of baby spinach
  • 1 chorizo sausage, chopped into small pieces
  • 1 tsp olive oil
  • 80 g butter, roughly chopped
  • 180g SR flour
  • 40 g polenta
  • 100g haloumi, chopped into small pieces
  • 2 eggs
  • 160 g butter milk (if you don't have buttermilk just squeeze a few drops of lemon juice into milk and let it sit for 5 minutes)
  • 2 Tbsp pepitas (pumpkin seeds)

Instructions

  1. Preheat oven to 180 degrees and line a 12 hole muffin tin with liners
  2. Put sweet potato & baby spinach into the TM bowl and grate Speed 5 / 4 seconds. Set aside
  3. Put the chorizo in the bowl and cook 100 degrees / Speed 1 / 5 minutes. Set aside
  4. Put butter, flour, polenta into the bowl and combine Speed / 4 / 4 seconds
  5. Add the eggs and buttermilk and combine Speed 5 / 3 seconds
  6. Add chorizo, sweet potato and baby spinach & haloumi, combine Reverse / Speed 4 / 4 seconds
  7. Spoon evenly among the lined muffin cups and sprinkle with the pepitas
  8. Bake in the oven for 25 - 30 minutes or until golden and cooked through
  9. Cool in the tin for about 5 minutes then serve warm or room temperature
  10. Enjoy!

Sweet Potato, Chorizo & Haloumi Muffins the regular way

What you need:

1 chorizo sausage, chopped into small pieces

1 tsp olive oil

1 1/2 C sweet potato, grated

1 1/2 C SR flour

1/4 C polenta

80g butter

1 C baby spinach, roughly chopped

100g haloumi, chopped into small pieces

2 eggs

3/4 buttermilk (if you don’t have buttermilk just squeeze a couple of drops of lemon juice into milk and let it sit for a few minutes)

2Tbsp pepitas

What you do:

Preheat the oven to 180 degrees and line a 12 hole muffin tin

Cook the chorizo in a fry pan (with the teaspoon of oil) oven a medium heat for about 5 minutes. Drain on kitchen paper

Combine the flour, polenta & butter  in a large bowl using your fingertips to rub the butter into the flour until it looks like breadcrumbs

Add the sweet potato, baby spinach, chorizo and haloumi and combine gently.

Whisk the eggs and butter milk together and then pour into the flour mixture and gently combine (don’t over mix)

Spoon evenly among the lined muffin holes, sprinkle with the pepitas

Bake for 25 – 30 minutes or until golden and cooked through

Cool in the tin for 5 minutes and then serve warm or room temperature

    I’m a loving the sound of these muffins because they contain two of my favourite things – haloumi AND chorizo! You can’t fit much more yum into a muffin!
