Watermelon raspberry basil & lime cooler

Is it hot where you are? It’s hot here so keeping hydrated is a big priority.  Until we moved to the tropics I could go a whole day with barely drinking anything other than tea and a coffee of course but now it’s essential to drink fluids all the time or the headaches are awful.  I carry water bottles with me everywhere now (like the kids) but that can get a bit boring so I’m turning my mind to fancy but uncomplicated drinks at the moment.  This Watermelon, Raspberry, Basil and Lime Cooler is a refreshing & healthy winner either as a mocktail or a really great cocktail, take your pick.

Another reason I’ve been playing about with drinks is because I’m stocking these gorgeous bamboo lidded tumblers in my new gift box business A Box Of… and I want to offer some creative ways to use them too (keep your eyes peeled for my mojito recipe next!). Watermelon, Raspberry, Basil & Lime Cooler


  • 1 C watermelon
  • 1/2 C frozen raspberries
  • 2 big basil leaves
  • juice of 1/2 lime
  • 1/2 C ice
  • 2 C mineral or soda water or sparkling wine
  • extra basil leaves to garnish


  1. Put the watermelon, raspberries, basil, lime juice and ice in a blender or Thermomix and blitz until smooth (Thermomix Speed 9 / 10 seconds).
  2. Add the water/wine swizzle around to mix through
  3. Pour into your glass of choice and garnish with some more basil and ice
  4. Cheers! Enjoy
  5. Makes enough for 4 people depending on the size of your glasses

    Looks delicious! I used to marvel at the fact that you can sometimes feel like you are walking around wearing a wet blanket yet none of that moisture comes through your pores. 😉
