Smoked Salmon Dip

I love that in summer in our little world it’s all about simple entertaining, in fact all my entertaining these days is simple, it’s too hot for anything complicated and I’d rather spend my time with our guests than slaving away in the kitchen anyway!! This easy Smoked Salmon Dip tastes great, is impressive enough to serve up to guests and only takes moments to make.

This was my contribution to two of our Christmas functions and no doubt I’ll be taking it along with me when asked “just bring a dip or something” in the future.  Would be a good one for New Years Eve too if you are looking for inspiration.

It makes about 2 cups so there’s always some left over for spreading on sandwiches, crackers or for your own snacking pleasure straight from the bowl!!  It’s gluten free, gives a protein hit and all those healthy omega 3’s so winning on all fronts!

Smoked Salmon Dip Thermomix

You only need 4 ingredients for this

2 spring onions, roughly chopped white part only

250g cream cheese

150g smoked salmon (I actually used the peppered hot smoked salmon as that is what I had in the fridge the first time)

2 Tbs lime juice

salt & pepper to taste

What you do:

Chop the spring onion (in the Thermomix speed 7 / 4 seconds or in the blended until finely chopped), scrape sides

Add the cream cheese and lime juice and combine – Thermomix speed 8 / 5 seconds or in the blender until smooth

Add the smoked salmon and combine – Thermomix Speed 7 / 6 seconds or until desired consistency (I like mine a little bit chunky) or in the blender

Season to taste and whizz through speed 3 / 3 seconds or a quick blend.

Transfer into the serving dish and serve with crackers and veggies sticks or it also goes really well on blini’s (mini pancakes) or in little sandwiches or straight out of the bowl!!

Keep refrigerated until you are ready to use.  It should keep in an airtight container in the fridge for a couple of days.

    Yum this recipe sounds delicious. I’m always looking for ways to enjoy smoked salmon (especially with French bubbles). I will definitely be making this for the weekend. Thanks. x Chris
