Cheers! I know I’m trying to be “Fresh in February” but I had some girlfriends around the other night so I thought it would be a good opportunity to continue on with my quest to try a new version of G&T’s for each month of 2017 (it began when we were on holidays with this one, as far as challenges go it’s a particularly enjoyable one, you can join me if you like, it’s not too late to catch up!) Anyway, I was flicking through the Woolies magazine at the checkout the other day I came across a recipe for Strawberry, Vanilla & Basil Gin & Tonic’s (go Woolies!, not sponsored just like their thinking on this one!) that happened to strike my fancy. It’s mostly fruit so I thought it would be ok to try out at home and still be “Fresh” in Feb!  Right? It would also make a pretty (& pretty tasty) drink for Valentines Day!

This was an impromptu gathering of a few girlfriends while the husband was away, everything was super easy to make. I whipped up my current go-to favourite dip, Easy Smoked Salmon, the usual cheeses, olives, nuts, grapes etc, etc plus, for those not into G&T’s I had a batch of my rhubarb cordial already made up, my girls love it with water but it really goes down a treat in bubbles – the evening took on an unplanned pink theme!

When making the rhubarb cordial you also get a compote which goes really well with yoghurt for breakfast or dessert! The how to details are here if the G&T’s are all you are interested in keep on scrolling down!

Also on the menu were Pea, Corn & Fetta Fritters which are quick and easy to make and taste great! (They were also part of the little Misses dinner before the big girls arrived and I set some aside for lunch boxes too). The recipe for these will be up on the blog next week.

Now about those Strawberry, Vanilla & Basil G&T’s…

Strawberry, Vanilla & Basil G&T’s

Serves 6 - 8


  • 20 strawberries, hull and chopped
  • 8 - 10 basil leaves, torn
  • 3 Tbsp lime juice
  • 1/2 tsp vanilla extract
  • 1/2 C gin
  • Tonic water
  • crushed ice


  1. Put the strawberries basil, lime and vanilla in a jug (or cocktail shaker) and muddle or mash with a fork.
  2. Add the gin, mix and/or shake
  3. Strain the mixture (either straight into the drinking glass or into a jug)
  4. Fill the drinking glasses with the crushed ice and pour a nip of the gin mix in, top with tonic
  5. Garnish with a basil leaf
