Even though it is still hotter than Hades here in the Tropical North we’ve been giving the slow cooker some action because it’s fantastic to come home to dinner being already made at the end of the day! This Slow Cooker Pulled Pork & Baked Sweet Potato meal went down a treat with the whole family (except the fussy one who only eats white potatoes but she loved the pork on her fork). Do you have a slow cooker and use it all year round?

I love the fact that you can whack the slow cooker on in the morning let it cook all day and dinner is easy peasy when you eventually get home.  This particular meal suits those trying to do LCHF, Paleo, gluten free, etc etc but it’s also super easy, quick (apart from the all day slow cooking) minimal effort and high on taste! Tick, tick tick, right? We use the left over pulled pork in wraps for lunch the following day and in Shepherds Pie as well ( you can freeze the cooked pork to use when ever you are ready). Repurposing the left overs like that is making the original meal very budget friendly too.

Pulled Pork & Sweet Potato

Over the last year or so I’ve been trying out many different pulled pork recipes and all have been amazing because you really can’t go wrong (watch me jinx that now!). Below is the one that we used for this meal it’s super easy & flavoursome. For the sweet potatoes all you need to do is give them a good scrub, a couple of pricks with a fork, drizzle with a bit of olive oil and bake them in the oven for about 40 minutes before you are ready to eat. The pork takes no longer than 10 minutes max to prepare in the morning.

  • 1 - 1.5 kg pork shoulder
  • 2 Tbsp paprika
  • 2 Tbsp brown sugar (optional)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp sea salt
  • 1 tsp cracked pepper
  • ¼ C apple cider vinegar
  • ¾ C water
  • Baked Sweet Potato
  • as many orange sweet potatoes as you need
  • 2 - 3 Tbsp olive oil


  1. Place vinegar and water in bottom of slow cooker
  2. Add the pork and then sprinkle all of the dried spices and rub into all sides of the pork
  3. Cover and cook on low for about 8 hours
  4. About 1 hour before wanting to eat, preheat oven to 180 degrees and line a baking tray with baking paper
  5. Prick the sweet potatoes with a fork a few times and put on the tray
  6. Drizzle with olive oil and bake in the oven for 40 minutes or until they are cooked through and soft
  7. Remove from oven and slice down the middle 3/4 deep
  8. In the pot shred the pork with two forks (remove any large fatty bits) & stir through the juices
  9. Top the sweet potatoes with the pork
  10. Added suggestions serve with a salad, coleslaw, cheese what ever takes your fancy
  11. Enjoy!
